=== Fermentation-produced chymosin === Because of the above imperfections of microbial and animal rennets, many producers sought other replacements of rennet. With genetic engineering it became possible to isolate rennet genes from animals and introduce them into certain bacteria, fungi, or yeasts to make them produce recombinant chymosin during fermentation. The genetically modified microorganism is killed after fermentation and chymosin isolated from the fermentation broth, so that the fermentation-produced chymosin (FPC) used by cheese producers does not contain a GMO or any GMO DNA. FPC is identical to chymosin made by an animal, but is produced in a more efficient way. FPC products have been on the market since 1990 and, because the quantity needed per unit of milk can be standardized, are commercially viable alternatives to crude animal or plant rennets, as well as generally preferred to them in industrial production. Originally created by biotechnology company Pfizer, FPC was the first artificially-produced enzyme to be registered and allowed by the US Food and Drug Administration. In 1999, about 60% of US hard cheeses were made with FPC, which thereafter made up to 80% of the global market share for rennet. By 2017, FPC had 90% of the global market share for rennet. By 2021, animal rennet still found use in some traditional or designated European cheeses but FPC covered 80-90% of the market in the US and UK. The most widely used FPC is produced either by the fungus Aspergillus niger and commercialized under the trademark CHY-MAX by the Danish company Chr.

== Food processing level == Food processing level (FPL) is a parameter used for grouping of food processing according to physical and (bio)chemical changes taking place in food materials during processing. Definition of the extent of processing benefits from the use of an ordinal level of measurement. Arbitrary grouping of processed food using nominal scales, such as extent of change, nature of change, raw material sources, ingredients used, place of processing, purpose of processing, traditional, novel and other type of treatments is often criticised. Ranking of food processing at an ordinal scale at any stage from food production in agriculture to eating by consumer describes the extent of food processing using the order of the different levels of processing. Processed food classifications often identify processing as a criterion for the grouping of processed foods. Some processed food classifications, such as the Nova classification, emphasise the role of processing in the development of obesity and noncommunicable diseases. The cells of the exocrine pancreas differentiate through molecules that induce differentiation including follistatin, fibroblast growth factors, and activation of the Notch receptor system. Development of the exocrine acini progresses through three successive stages. These are the predifferentiated, protodifferentiated, and differentiated stages, which correspond to undetectable, low, and high levels of digestive enzyme activity, respectively. Pancreatic progenitor cells differentiate into endocrine islet cells under the influence of neurogenin-3 and ISL1, but only in the absence of notch receptor signaling. Under the direction of a Pax gene, the endocrine precursor cells differentiate to form alpha and gamma cells. Under the direction of Pax-6, the endocrine precursor cells differentiate to form beta and delta cells. The pancreatic islets form as the endocrine cells migrate from the duct system to form small clusters around capillaries. This occurs around the third month of development, and insulin and glucagon can be detected in the human fetal circulation by the fourth or fifth month of development.
